The South-East (Carlow, Kilkenny, Waterford, and Wexford) is the second largest producer of Cereals, Potatoes, and Fresh Fruit in the State, generating 17% of the total value of all Irish Crops in 2025. It is also a significant Milk producing region, accounting for 19% of Irish Milk. Milk was responsible for 38% of the value of the region’s Agricultural Output at Basic Prices, with Cattle a further 25%, and Crops another 21%. It is also an important producer of Horses, with 24% of the value of Horses generated within the region.
The region’s Agricultural Output at Basic Prices increased by 10% (+€191m) to €2.2bn. The value of its Livestock grew by 23% (+€146m) to €780m, with Cattle accounting for €144m of this growth. The region had the second largest growth rate in Milk values, which were up 9% (+€68m) to €843m. The value of its Crops fell by 5% (-€25m) to €468m, with Cereals and Potatoes accounting for €5m and €4m respectively of this drop.
Intermediate Consumption costs increased by 5% (+€57m) to €1.2bn. Fertilisers accounted for €26m of this additional expenditure, with Maintenance & Repairs responsible for an extra €17m and Feeding Stuffs a further €10m. There was also a significant rise in Veterinary Expenses, which grew by 17% (+€9m). Receipts of Other Subsidies less Taxes on Production were up 6% (+€13m) to €215m. The region’s Operating Surplus grew by 22% to €733m while its Entrepreneurial Income increased by 29% to €634m (See Table 1.1 and PxStat Table ACA03).
